First, wash the drumsticks thoroughly and wipe them completely dry using a clean kitchen towel.

మునక్కాయ ఆవకాయ – ఆంధ్ర స్టైల్‌లో రుచికరమైన డ్రమ్మ్‌స్టిక్ పికిల్

మామిడికాయ ఆవకాయ అంటే మన ఆంధ్రవాళ్లకు ఎంత ఇష్టమో ప్రత్యేకంగా చెప్పాల్సిన అవసరం లేదు. కానీ మామిడికాయ సీజన్‌లో మాత్రమే కాకుండా, మునక్కాయలు దొరికినప్పుడు కూడా వాటితో అదిరిపోయే ఆవకాయ చేసుకోవచ్చు.

మునక్కాయతో చేసే ఈ ఆవకాయలో కారం, ఆవాలు, వెల్లుల్లి, నువ్వుల నూనె కలిసిన రుచి చాలా ప్రత్యేకంగా ఉంటుంది. అన్నంలో కొద్దిగా నెయ్యి వేసుకుని ఈ మునక్కాయ ఆవకాయ కలుపుకుని తింటే… ఆ రుచే వేరు!

ఇంట్లో సింపుల్‌గా, ఎక్కువ కష్టం లేకుండా మునక్కాయ ఆవకాయ ఎలా చేసుకోవాలో ఇప్పుడు చూద్దాం.

🥒 కావాల్సిన పదార్థాలు

  • మునక్కాయలు – 6 నుంచి 8

  • మెంతుల పొడి – ½ టీస్పూన్
  • నిమ్మరసం – 1 నుంచి 2 టేబుల్ స్పూన్లు (ఐచ్ఛికం)

🌿 ముందుగా మునక్కాయలను సిద్ధం చేసుకోవాలి

ముందుగా మునక్కాయలను బాగా కడిగి శుభ్రమైన గుడ్డతో పూర్తిగా తుడిచేయాలి.

మునక్కాయలపై నీటి తడి అసలు ఉండకూడదు. ఆవకాయ ఎక్కువ రోజులు నిల్వ ఉండాలంటే ఈ విషయం చాలా ముఖ్యం.

తర్వాత మునక్కాయలను సుమారు 2 నుంచి 3 అంగుళాల ముక్కలుగా కట్ చేసుకోవాలి.

ముక్కలు మరీ చిన్నగా కాకుండా కొంచెం పెద్దగా ఉంటే తినేటప్పుడు మునక్కాయ రుచి బాగా తెలుస్తుంది.

🌶️ ఆవకాయ మసాలా తయారీ

ఇప్పుడు ఒక పెద్ద గిన్నె తీసుకుని అందులో కారం, ఆవాల పొడి, ఉప్పు, పసుపు, మెంతుల పొడి వేసుకోవాలి.

వీటన్నింటినీ పొడిగా బాగా కలపాలి.

ఇప్పుడు ఇందులో వెల్లుల్లి రెబ్బలు వేసుకుంటే ఆవకాయకు మంచి ఆంధ్ర ఇంటి వంట రుచి వస్తుంది.

చివరగా నువ్వుల నూనెను కొద్దికొద్దిగా పోస్తూ మసాలాను కలుపుకోవాలి.

నూనెతో మసాలా బాగా కలిసిన తర్వాత మన ఆవకాయ మిశ్రమం రెడీ అవుతుంది.

🥄 మునక్కాయ ముక్కలను కలపడం

ఇప్పుడు ముందుగా కట్ చేసి పెట్టుకున్న మునక్కాయ ముక్కలను మసాలాలో వేసుకోవాలి.

చేతులతో కలపాలనుకుంటే చేతులు పూర్తిగా పొడిగా ఉండాలి. లేదంటే శుభ్రమైన పొడి గరిటెతో మెల్లగా కలుపుకోవచ్చు.

ప్రతి మునక్కాయ ముక్కకు మసాలా బాగా పట్టేలా కలపాలి.

అంతే… మన మునక్కాయ ఆవకాయ దాదాపుగా సిద్ధమైపోయింది.

🫙 ఆవకాయను నిల్వ చేయడం

మునక్కాయ ఆవకాయను ముందుగా శుభ్రంగా, పూర్తిగా పొడిగా ఉన్న గాజు సీసాలోకి తీసుకోవాలి.

పై నుంచి మిగిలిన నువ్వుల నూనె కొద్దిగా పోసి మునక్కాయ ముక్కలు పూర్తిగా నూనెతో కవర్ అయ్యేలా చూసుకోవాలి.

సీసాను బాగా మూత పెట్టి ఒకటి లేదా రెండు రోజులు ఉంచితే మసాలా మునక్కాయలోకి బాగా దిగుతుంది.

మొదటి రోజు రుచి చూసినదానికంటే ఒకటి రెండు రోజుల తర్వాత రుచి మరింత బాగుంటుంది.

🍚 ఎలా తింటే బాగుంటుంది?

వేడి వేడి అన్నంలో ఒక చెంచా నెయ్యి వేసుకుని, పక్కన మునక్కాయ ఆవకాయ వేసుకుని కలుపుకుని తింటే అదిరిపోతుంది.

పెరుగన్నంలో కూడా ఈ ఆవకాయ చాలా బాగుంటుంది.

దోసె, ఇడ్లీ, ఉప్మా లాంటి టిఫిన్లతో కూడా ట్రై చేయవచ్చు.

నీటి తడి ఉండకూడదు: మునక్కాయలను కడిగిన తర్వాత పూర్తిగా ఆరబెట్టడం చాలా ముఖ్యం.

నూనె విషయంలో: ఆవకాయకు సాధారణంగా నువ్వుల నూనె మంచి రుచిని ఇస్తుంది. నూనె మసాలా, ముక్కలను బాగా కవర్ చేసేంత ఉండాలి.

తడి గరిటె వాడకండి: ఆవకాయ తీసుకునేటప్పుడు ఎప్పుడూ పొడి, శుభ్రమైన చెంచానే ఉపయోగించడం మంచిది.
