Palathalikalu is a traditional Andhra sweet made with rice flour, milk and jaggery. It is especially prepared during festivals and special occasions. Soft rice-flour dumplings cooked in sweetened milk give this recipe a delicious traditional taste.
Ingredients
For Talikalu
- 1 cup rice flour
- 1¼ cups water
- A pinch of salt
- 1 teaspoon ghee
For Palathalikalu
- 1 litre milk
- 200–250 grams jaggery
- 2 tablespoons grated coconut
- ½ teaspoon cardamom powder
- 1 tablespoon ghee
- 8–10 cashews
- 8–10 raisins
Preparation
First, take water in a pan and bring it to a boil. Add a pinch of salt and one teaspoon ghee. Slowly add the rice flour and mix well without forming lumps. Turn off the flame, cover it and leave it for a few minutes.
When the mixture is warm enough to handle, knead it into a soft dough. Apply a little ghee to your hands and make small, thin rice-flour strings or small pieces. These are called talikalu.
Now boil the milk in a heavy-bottomed pan. Once the milk starts boiling, reduce the flame and gently add the prepared talikalu. Cook on low flame until the rice-flour pieces become soft and cooked properly. Stir gently from time to time so they don't stick to the bottom.
Meanwhile, melt the jaggery separately with a little water and strain it to remove any impurities. Once the talikalu are cooked, add the jaggery syrup and mix gently. Cook for another few minutes on low flame.
Add grated coconut and cardamom powder and mix well. Finally, heat one tablespoon of ghee in a small pan, fry the cashews and raisins until golden, and add them to the Palathalikalu.
Mix everything gently and turn off the flame.
How to Serve
Serve Palathalikalu warm or slightly chilled. The soft rice-flour talikalu, creamy milk and natural sweetness of jaggery make it a delicious traditional Andhra dessert.
Tips
- Make the rice-flour dough soft so the talikalu will be tender.
- Cook the talikalu completely before adding jaggery.
- Always add jaggery after the rice-flour pieces are cooked properly.
- Use fresh milk for a richer taste.
- Adjust jaggery according to your preferred sweetness.
Palathalikalu is a simple traditional recipe, but the taste is truly special when prepared patiently on a low flame.
