This is a simple Andhra-style chicken curry made with chicken, onions, ginger garlic, green chillies, curry leaves and Indian spices. It goes very well with hot steamed rice, chapati, roti or even dosa.

🛒 Ingredients

For the Chicken

500 grams chicken, curry cut

1 teaspoon turmeric powder

1 teaspoon red chilli powder

1 tablespoon ginger garlic paste

Salt as needed

1 tablespoon lemon juice

For the Curry

3 tablespoons oil

2 medium onions, finely chopped

2 tomatoes, chopped

2–3 green chillies, slit

1 tablespoon ginger garlic paste

8–10 curry leaves

1 teaspoon cumin seeds

1 small cinnamon stick

2 cloves

1 bay leaf

1½–2 teaspoons red chilli powder

1 teaspoon coriander powder

½ teaspoon turmeric powder

½ teaspoon garam masala

1 cup water, or as required

Fresh coriander leaves

Salt as needed

For a richer gravy, you can also add a small amount of cashew paste. Some Andhra-style preparations use cashew or poppy-seed based pastes for a thicker gravy. �

👨‍🍳 How to Make Andhra Chicken Curry

Step 1: Marinate the Chicken

Take 500 grams of cleaned chicken in a bowl.

Add:

Turmeric powder

Red chilli powder

Ginger garlic paste

Salt

Lemon juice

Mix everything well and keep it aside for 20–30 minutes.

This helps the chicken absorb the flavours.

Step 2: Start the Curry

Heat 3 tablespoons of oil in a kadai or thick-bottomed pan.

Add cumin seeds, cinnamon, cloves and bay leaf.

Once they start releasing their aroma, add curry leaves and green chillies.

Step 3: Fry the Onions

Add finely chopped onions and a little salt.

Cook on medium flame until the onions become golden brown.

Don't rush this step. Properly cooked onions give the curry a much better taste.

Step 4: Add Ginger Garlic and Tomatoes

Add ginger garlic paste and fry until the raw smell goes away.

Now add chopped tomatoes.

Cook until the tomatoes become soft and the oil starts separating from the mixture.

Step 5: Add the Chicken

Add the marinated chicken pieces.

Mix everything well and cook on medium-high flame for about 5–7 minutes.

The chicken will change colour and start releasing its juices.

Step 6: Add the Spices

Now add:

Red chilli powder

Turmeric powder

Coriander powder

Salt

Mix well and cook for another 2–3 minutes on medium flame.

Step 7: Cook the Chicken

Add about 1 cup of water and mix well.

Cover the pan and cook on low-medium flame for around 15–20 minutes, or until the chicken becomes soft and properly cooked.

Stir occasionally and add a little more water if you want more gravy.

Step 8: Final Touch

Once the chicken is cooked, add garam masala and plenty of fresh coriander leaves.

Mix well and cook for another 2 minutes.

Turn off the stove.
