  • 1 teaspoon coriander powder
  • ½ teaspoon cumin powder
  • Salt as required

  • ½ teaspoon mustard seeds
  • ½ teaspoon cumin seeds
  • Few curry leaves
  • Fresh coriander leaves for garnish

Preparation Method

Step 1: Clean the Bendakaya

Wash the bendakaya thoroughly and wipe each one completely dry using a clean kitchen towel. This helps reduce the stickiness while cooking. Cut the bendakaya into small round pieces.

Step 2: Prepare the Tempering

Heat oil in a thick-bottomed pan. Add mustard seeds and cumin seeds. Once they begin to splutter, add curry leaves and green chilies. Then add the sliced onions and sauté until they turn light golden.

Step 3: Add the Spices

If using ginger-garlic paste, add it now and cook for a minute. Mix in turmeric powder, chilli powder, coriander powder, cumin powder, and salt.

Step 4: Cook the Bendakaya

Add the chopped bendakaya to the pan. Mix gently so the masala coats every piece. Cook on medium flame without covering the pan. Stir occasionally to avoid breaking the pieces.

Continue cooking for about 15–20 minutes until the bendakaya becomes soft and slightly crispy.

Step 5: Final Touch

Switch off the flame once the curry is cooked well. Garnish with freshly chopped coriander leaves.
